Spice Cabinet Chronicles: January

January oh January, a time to refresh and restart. Some people like to go through their entire home and clean everything, start new hobbies, and make new commitments. 

But how about just trying a new spice? Our spice of the month for January is none other than the Cranberry Maple Rub. The holidays are over, we have a little extra time, so why not get in the kitchen and try something new? 

Also how many of us now have a bag of cranberries sitting in the fridge that you bought for Christmas and now are not sure what to do with? Well lets use them up.

This spice is easy to use, adds so much variety and flavor to a meal, so let's get to it and go through the meal we made with it this month.

Steak tips seasoned in Cranberry Maple Rub, served over mashed sweet potatoes.




Ingredients:

1 Large sweet potato

4 tbsp butter

3 Tbsp Cranberry maple rub

2 Tbsp Pure maple syrup

1 tsp sea salt

¼ cup heavy cream

¼ cup fresh cranberries

  1. Lightly rinse your sweet potato and peel the skin off of it if desired. Cube your sweet potato and have it cook down faster.
  2. Place your sweet potato cubes in a pot and fill with water, cover with a lid and let boil.
  3. Set your pan on the stove and let heat up on medium heat till hot enough.
  4. While waiting on your pan to heat up, place steak tips if pre cut into a bowl and sprinkle your 3 tbsp of cranberry maple rub over the top, and mix together thoroughly making sure each piece is coated. 
  5. If the pan is ready,place 2 Tbsp of butter into it and let melt, add in steak tips.
  6. Once one side is browned flip the meat pieces
  7. At this point, add in your ¼ cup of cranberries to the pan and they will naturally pop open and release juices and flavor into the pan with the meat. Add your maple syrup now as well and give a little stir to make sure it get on all the meat.
  8. The diced potato pieces should be ready at this point too, turn off the heat and strain the potatoes. Add in 2 tbsp of butter and a dash of cream and start mashing. At this point you can mash them down however smooth you want or if you like it a little homemade and lumpy, do whichever you wish! Also the amount of cream added is totally dependent on youand how you like your mashed potatoes. I added more for a smooth and creamy mashed sweet potato. Add in your salt to your desired level. 
  9. Once the cranberries have popped and you meat is cooked to whatever state you like (medium rare,medium, well ect..) turn the heat off and you're ready to plate!



We layered them one over the other but they can be enjoyed however. This meal is quick, delicious, and looks impressive for the short amount of time it takes to make it.
