It is said that Louisiana Indians first used this seasoning, which is made from the dried and ground leaves of the sassafras tree. To this day, it is used in Cajun and Creole cuisines as a seasoning and a thickening agent. It has a woodsy flavor, similar to birch or root beer. Along with okra, it is an essential ingredient in true filé gumbo.
Cooking Notes
- Comes in a 1.5 oz. package
- Stir into the dish after it is removed from the heat, just before serving.
- Use as a thickener in soups, stews, and gumbos
- Do not overcook! Gumbo filé powder becomes tough and stringy when left on the stove too long.
